Which solution for your profile?
Short stay (1–2 weeks) with a generous EU plan
→ Roaming is perfectly sufficient. Don't bother with a local SIM.
If your plan includes EU data, you don't need anything else for a standard stay. 4G coverage in tourist areas (Chania, Heraklion, Rethymno, main coasts) is reliable.
